To make a protein rich carrot cake, you will need two cups of powdered rolled oats, three heaping scoops of protein powder (vanilla flavored), one tablespoon of baking powder, one teaspoon cinnamon powder, one teaspoon each of ginger, cloves and nutmeg powder, half teaspoon of kosher salt, one tablespoon of stevia, three egg whites, one and a half cup of unsweetened apple syrup, 450 grams of finely grated carrots, one teaspoon of vanilla extract, 10 ounces of fat free cream cheese and one cup of walnuts( chopped). Preheat the oven at about 350 degree Centigrade. Whisk the eggs properly and then add all the mixture into a bowl, and blend it properly. Pour it on a pan which is properly greased and bake the batter for 20 to 25 minutes. Once done garnish it with some apple syrup and walnuts.
